Sweet & Spicy stuffed Capsicums

Ingredients (serves 3+)

  • 4-6 capsicums (depending on size) , halved
  • 500g lean grass fed beef (for vegan friends substitute with lentils)
  • 1 Cup cauli-rice (or normal rice or couscous)
  • 1 Cup mushrooms, chopped
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 onion, diced
  • 1 bottle of Toscano Authentic tomato puree
  • 2 Tbsp tomato paste
  • 1 tsp natural broth concentrate
  • 2-4 garlic cloves (measure with your heart)
  • 2 Tbsp Mexican spices
  • 1 tsp chipotle hot sauce (optional)
  • Salt & Pepper to taste

Method

  1. Toss the capsicums in the vegetable oil with salt and pepper
  2. Roast for 10-15 mins until tender flipping halfway through
  3. Cook carrot, zucchini, mushroom, rice, garlic & onion in vegetable oil until tender
  4. Add beef (or lentils) and the remaining ingredients and cook until cooked through
  5. Stuff capsicums
  6. Load with toppings
  7. Enjoy

Chickpea Curry

Chickpea Curry

Ingredients

For the curry
• 1 can of chickpeas , drained & rinsed
• 1 Onion
• Garlic (as much as you want)
• 4 large carrots, sliced .
• 1 bottle of Toscano cherry tomatoes Passata
• 1 Tbsp curry concentrate + 1/2 cup of water
• A pinch each of nutmeg & cinnamon
• 1 tsp turmeric

Optional add ins
• 1 Tbsp  cashew butter – makes it extra creamy .

To serve with
• Rice
• Chili
• A dollop of yoghurt
• Coriander

Method

  1. Mix all the ingredients in a slow cooker and cook on low for 4-6 hours or high for 2-3 hours
  2.  Enjoy!

Vegetarian Lasagna

Vegetarian Lasagna

Ingredients

Lasagna

• 6 rye wrap sheets
• 2 packets of vegan mince
• 1 -2 bottles of Toscano Passata
• 1 can of crushed tomatoes• 1/2 brown onion
• 1/2 red onions
• 1 carrot
• 1 garlic clove
• Italian herbs
• light cheese or vegan cheese approx. 200-250g

Bechamel

• 2.5 cup of soy milk
• 2.5 tbs corn starch
•  1/4 cup nutritional yeast
• pinch of salt and pepper

Method

  1. Preheat oven to 180•c
  2. Sauté the diced Onion, garlic and carrot until fragrant.
  3. Add in the veggie mince and cook evenly.
  4. Add in the Toscano Passata, crushed tomatoes & herbs and simmer for 10-15.
  5. Place a small pot on medium heat and place all the ingredients for the Bechamel.
  6. Whisk well making an ‘8’ shape and stir continuously to avoid clumping. Once slightly thickened, remove from the heat.
  7. In a large dish, spoon some of the mince mixture, followed by some bechamel, then a sprinkle of cheese and wraps, repeat the process until the mix is gone.
  8. Save a little bechamel and some additional cheese to poor on top with a sprinkle of herbs. Bake for 30 minutes covered with foil and another 10-15 without.
  9. Enjoy!

Vegan Ratatouille

Ingredients

  • 1 jar Toscano Authentic Passata cherry tomato sauce⁠
  • 1 ½ tsp dried mixed herbs⁠
  • 1 tsp dried garlic⁠
  • ¼ tsp sea salt⁠
  • 1-2 large zucchini⁠
  • 2 Japanese eggplants⁠
  • 1 medium sweet potato, peeled⁠
  • 4 fresh Roma tomatoes⁠
  • 1-2 tbsp basil pesto⁠
  • Olive or avocado oil, to spray

Method

  1. Preheat oven to 180C. Lightly grease a 25 cm (10 inch) baking dish and set aside.⁠
  2. In a medium mixing bowl, combine the passata, herbs, garlic, and salt.⁠
  3. Pour the tomato mixture into the prepared baking dish and smooth it into an even layer on the bottom of the pan.⁠
  4. Cut the vegetables into 5mm thick slices.⁠
  5. Layer the veggie slices, alternating each slice (zucchini, sweet potato, eggplant, tomato; repeat) starting from the outside of the dish. Repeat until the whole baking dish is filled and all veggie slices are used.⁠
  6. Lightly spray the top of the veggies with extra virgin olive oil and season with salt and pepper. ⁠
  7. Cover the dish with foil and bake for 40 minutes. Uncover, then bake for another 20 minutes, until the vegetables are softened.⁠
  8. Drizzle with pest and serve!⁠
